Chocolate Almond Butter Balls

These rich, nutty cookies are perfect with morning coffee or afternoon tea. Or for sneaking
from the cookie jar in the middle of the night!

INGREDIENTS

3/4 cup Bridge Brands dark chocolate discs
2 tablespoons milk
1 1/2 cups (three sticks) unsalted butter
1 cup granulated sugar, plus extra sugar for dusting
4 teaspoons vanilla extract
4 cups flour
1/2 teaspoon salt
1 cup almonds, finely chopped

PREPARATION
  1. Preheat oven to 350ºF. Melt the chocolate and milk over low heat, preferably in a
    double-boiler.
  2. In a large bowl, cream the butter, sugar and vanilla. Slowly blend in the
    chocolate-milk mixture.
  3. In a separate bowl, combine the flour and salt. Mix slowly into the chocolate-butter
mixture, and fold in the almonds.
  4. Form dough into 1 1/2" balls and roll in sugar. Place on a greased cookie sheet.
  5. Bake balls for 12-15 minutes (until the cookies are set but not dark brown).
