Chocolate Meringues

Crisp and delicate, these little meringues melt in your mouth. They are a delightful way to
get a fix of chocolate without heaviness.
 
INGREDIENTS
 
1 cup Bridge Brands dark chocolate discs
3 egg whites
1 cup granulated sugar
1/3 cup graham cracker crumbs
1 teaspoon vanilla extract

PREPARATION
  1. Preheat the oven to to 350ºF. Lightly grease cookie sheets with butter.
  2. Melt the chocolate in a double boiler over barely simmering water. Remove from hot
    water and set aside to cool for at least 5 minutes.
  3. In a large mixing bowl, beat the egg whites until they hold stiff peaks. Add the sugar,
    1/4 cup at a time, continuing to beat until the mixture is smooth and glossy. Fold in
    the melted chocolate, crumbs and vanilla.
  4. Drop mixture by level teaspoonfuls, about 1 1/2 -inches apart, onto the prepared
    cookie sheets. Bake for 15 minutes, or until the meringues are dry and the bottoms
    are lightly browned.
